Pumpkin Spice Cookies
Fall is one of my absolute favorite seasons (Winter has it beat, but only by a little bit). I love the brisk weather, sweaters, boots, leaves changing colors, the holidays, and all things PUMPKIN! It's the one time of year that it's socially acceptable to bake yourself silly with pumpkin! Pumpkin cookies, pumpkin rolls, pumpkin muffins, pumpkin bread, pumpkin cheerios, and roasted pumpkin seeds...I mean who doesn't love it? Something about this wonderful season brings out all sorts of baking sprees in my free time!
These Pumpkin Spice Cookies are perfect for a Fall day, or really any day for that matter. With the perfect hint of pumpkin, nutmeg, and cinnamon they are sure to make your taste buds sing a beautiful fall melody. Any cookie that will melt in your mouth is one worth making. They are a family favorite around our home and i'm sure they will be around yours.
Pumpkin Spice Cookies
1/4 c Margarine 1 1/4 c Flour
1 c Sugar 1/2 tsp Baking Soda
1 small Egg 1/2 tsp Salt
1/2 c Pumpkin 1/2 tsp Nutmeg
1/2 tsp Vanilla 1/2 tsp Cinnamon
1/2 tsp Baking Powder (optional 3/4 c Chocolate Chips)
1.Preheat oven to 375*
3. Cream together Margarine and Sugar.
4. Add Egg, Pumpkin, and Vanilla to mixture and cream together till smooth.
5. Sift Dry Ingredients together and add to the mixture.
6. Mix in Chocolate Chips if desired.
7. Bake for 8-10 minutes till edges are light brown and let cool.
