BBQ Cheese Little Smokies

October 17, 2017
Fall is a big deal in our family. Our weekends revolve around which football team is playing, what time our "teams" are playing and then half way through the season our week is then consumed with what basketball game and baseball game is on. My husband and I are currently in our own Fantasy Football league to determine who decides what we eat on the weekends. I joke that I lose my husband during football and basketball season but really I love it almost as much as he does (I don't think anyone can love it as much as he does). I love the spirit of competition and cheering on our favorite teams. Our son can sing you the words of the fight song and will cheer loud at the TV. However, the number one reason why I love watching sports is because of the food I get to cook and then consume. Food is a BIG part of our life as it brings us together as a family and as husband and wife. And let me tell you, we can do game day food.  I mean any excuse we get to eat a bunch of carbs on top of carbs, with some protein is a good one.

Folks, these BBQ Cheddar Little Smokies are worth any excuse you have to make and why do you even need an excuse?? We eat these for snacks, appetizers, dinners, games, parties, and really anytime we have the ingredients in our fridge. Side Note--If you have a Kroger near by Little Smokies are on sale basically now until the end of the year...it definitely is the most wonderful time of the year. The kids love them just as much as us adults do.

All you need is a bag of Little Smokies, a can of Refrigerated Original Biscuits, BBQ sauce, and Cheddar Cheese. Take the biscuits, flatten each one, and cut it in half with a pizza cutter. Put your BBQ sauce in a small bowl and use a basting brush to cover the biscuit in sauce. Put a layer of Cheddar Cheese on top of the sauce and place your Smokie in the middle. Then roll up the biscuit just like you are putting a blanket over the Smokie (hence the term "pigs in a blanket"). Make sure you press the edges of the biscuit together to make sure it doesn't open in the oven. It's okay if the cheese falls out a little bit! That just means your going to have a delicious cheesy bite! Bake at 400° for 10-13 minutes or until golden brown.

You will impress anyone coming to your next game day or holiday party!
